A Tom Collins that grew up and put on evening wear. We shake gin, lemon and sugar, then top with brut champagne in a flute. It should kick and then float.

Ingredients
- Gin30 ml
- Lemon juice15 ml
- Sugar syrup10 ml
- Champagne60 ml
Method
Shake gin, lemon and syrup. Strain into a flute. Top with cold champagne. Garnish with a long lemon twist.
Flavour: Citrus, bubbles, juniper lift.
